Chocolate Chip Pumpkin Bread

Enjoy this sweet and spicy chocolate chip pumpkin bread for breakfast or as a tasty mid-afternoon treat.

Ingredients:
2 cups sugar
2 cups canned pumpkin
1/2 cup canola oil
1/2 cup vanilla yogurt
4 large egg whites
3 cups flour
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
1 teaspoon baking soda
1 1/2 cups semi-sweet chocolate chips

Directions:
Preheat oven to 350.
Combine first 5 ingredients in a large bowl, stirring well with a whisk. Combine dry ingredients in a medium bowl. Add flour mixture to pumpkin mixture, stirring just until moist. Stir in chocolate chips.
Spoon batter into 2 (8x4 inch) loaf pans coated with cooking spray. Bake at 350 for 1 hour and 15 min. OR use 3 smaller loaf pans and bake for 50 min. Cool 10 minutes and remove from pans. When cool, wrap tightly and freeze, if desired.

Cook's Notes:
Use disposable aluminum pans with plastic lids. Pop a bow on top and you have a ready made hostess gift or holiday gift.
