Pies are fantastic for when you want to impress your guests—it can take a real baker’s talent and a lot of time in the kitchen to make excellent homemade crusts—roll them out, place them in the pie pan without tearing them, then cut strips and place them into a lattice top. A cobbler is much easier; the crusts or toppings are very simplified and it doesn’t take nearly as much time. This unpretentious six-ingredient recipe comes together in just 10 minutes, and you don’t have to fuss over fitting a pastry crust into a pan. Simply melt butter in the baking dish, then mix flour, sugar, milk, and vanilla together and pour onto the butter. Then spoon peaches over the batter mixture and bake. It can’t get any easier, or any more delicious. Everyone loves enchiladas but all that rolling and filling can be a little labor-intensive on a busy weeknight. So we figured out a way to bake up a pan of delicious mini enchiladas in three easy steps! First, tuck small flour tortillas into two muffin pans and bake until browned to make crispy shells. Next, fill the prepared shells with a mixture of black beans, refried beans, enchilada sauce, green chiles, and shredded Monterey Jack cheese. Use a mild enchilada sauce and omit the chiles if your family doesn’t like a lot of heat. Bake the mini enchiladas until the cheese melts, then top each one with shredded lettuce, pico de gallo, sour cream, and scallions. Serve with your favorite green salad (a serving size is three mini enchiladas per person) for a fast and family-friendly meal that will be on your dinner table in 30 minutes.

No matter the style, this dish combines essential, resourceful Southern cuisine and the comfort of home cooking, all in one bowl. Mrs. Morton Smith experimented for years with different methods of making the perfect chicken and dumplings. When she submitted this recipe, she told us that buttermilk was the secret to dumplings with a light texture. She also kneaded them on a well-floured surface because the extra flour thickens the broth.

This summer pie looks difficult, but thanks to store-bought ice cream and a press-in cookie crust, it’s a cinch to assemble. All you need is enough time for it to freeze so the layers look nice and neat. When pressing the crumb crust into the pie dish, press just hard enough until it is firm. Don’t press so hard that it makes the crust gummy (it will be difficult to get clean slices out of the pan if the crust sticks). To save even more time, the crust doesn’t really need to be baked; just pop it in the freezer for 20 to 30 minutes to firm up before filling. <br>

We upped the ante on this Lone Star favorite by making it in a cast iron skillet, which gives the moist chocolate cake deliciously chewy edges and a gooey center. When topped with chocolate frosting and toasted chopped pecans—and some vanilla ice cream for good measure—it’s a cake you’ll be thinking about long after your plate is licked clean. Our test kitchen cooks loved this decadent dessert so much they said it doesn’t even require plates—just spoons. A 12-inch cast iron skillet is the best size for this cake. The frosting will thicken as it cools, but should be poured over the cake when it is still warm. Texas Skillet Cake is best served warm, although it’s also good at room temperature. Who are we kidding—this amazing dessert won’t be around long enough to cool to room temperature.
